We are almost finished planning another facet
of our inn. Over the years, we have hosted more
than 40 weddings with as many as 200 guests. Now
we are pleased to offer catering services for
small receptions, meetings, retreats and
seminars. Any event for up to 50 guests. Most of
you already know of Jacquie's skill in the
kitchen. This service will make planning of such
an event much easier for you.
We are now working on the Wedding and
Corporate Retreat Link to our website, and will
let you know when it is up and running.
A number of you have already taken us up on our
"Friends of Buck Hollow" program.

BRAD & JACQUIE'S
KITCHEN

CROISSANT FRENCH
TOAST & CHOCOLATE SAUCE
Yield: 12 servings
10 oz. dark semi-sweet chocolate
1 cup half & half, or heavy cream
12 large eggs beaten
¾ cup milk
¼ cup sugar
¼ cup orange liqueur
2 tsp ginger
½ cup melted butter
¼ cup oil
6 large navel oranges, peeled and sliced
(36 pieces)
12 large, day old croissant
Prepare sauce: Cut chocolate into
small pieces. Place in non-reactive
bowl. Heat cream to almost boiling; do
not boil. Pour hot cream over chocolate
and whisk until smooth. Keep warm until
service. In shallow bowl, whisk together
eggs, milk, sugar, orange liqueur, and
ginger. Cut croissants in half
lengthwise. Soak in egg mixture for 3
minutes. Blend butter and oil. Pour
small amount on griddle or skillet. Cook
croissants over medium heat until golden
brown on each side and thoroughly
cooked.
On serving plate, place bottom half
of croissant. top with 3 orange slices
and cover with croissant top. Drizzle
with chocolate. Serve immediately.

All right
! I understand. I know I'm three years
old. But inside I'm just a kid. I play,
joke around, have lots of fun and all
that. OK ? Still a kid.
And what's the most important thing to a
kid ? Even more important than food,
toys, pats on the head and cats to
chase. BIRTHDAYS ? That's what.
So what did they do for my birthday
(yes, you know who "they" is)
? Did I get that traditional T - Bone to
chew on ? Or some other unusual delicacy
? Oh no. Not that OR ANYTHING ELSE !
They forgot - totally forgot !
Oh sure, I got my usual hugs, kisses.
praise, pats and attention - just like
any other day. BUT THIS WAS MY BIRTHDAY
! Not even best wishes.
I think I'll go on strike. Forget my
guided walking tours for guests. Forget
my warning barks whenever anyone
approaches the house. Forget my friendly
greeting to all guests as their car
pulls in. And forget my sleeping in the
room with guest dogs so they'll feel at
home.
Maybe next year they'll remember.
Just give me the bone, baby ! Give me
the bone.

The sky is
full of the sight and sound of honking
geese returning home. My favorite months
are just ahead. However, that does
remind me that as the geese turn around
and head South we'll be in foliage
season (approx Sept 20 thru Oct 10).
That's by far the busiest time for us
and the entire state. So please reserve
as early as possible if you're planning
a fall trip - anywhere in Vermont. I'll
point our that we never require a
minimum stay and our rates do not
increase.
For the past two years we have been (and
will remain) pet friendly. We have found
however that there is significant
additional wear and tear. So in the
future we will reluctantly have a small
surcharge for pets. $ 10.00 for a one
night stay, $ 15.00 for stays longer
than one night. We believe that, though
modest, it will help to offset some of
our additional expenses.
Finally. Jacquie and I (as part of our
antique business) will be set up at
Brimfield in just a few weeks (along
with a couple of close friends). Please
come and see us if you're going to be
there. We'd love to meet you or see you
again. We'll be at the "May's"
show May 13, 14 and 15. You'll find us
at booths 117 and 118. Also, if there's
anything you're looking for please let
us know and we'll see if we can find you
that treasure.
